A delicious recipe that includes Italian Sausage, tomatoes, onions and mushrooms. The addition of sugar takes the dish to another level. I enjoy having this over white rice.
Scramble fry sausage, onion and garlic in a large skillet over medium-high heat for approximately 8 minutes, stirring constantly until sausage is browned. Drain off excess grease.
Add mushrooms, reduce heat to medium and cook for approximately 3 minutes until browned.
Add next 4 ingredients, stir and bring to a boil. Reduce heat to medium-low. Simmer covered for 45 minutes, stirring occasionally until tomato breaks down.
Add tomato paste to thicken, more or less depending on what consistency you prefer.
Remove from heat to a serving platter and sprinkle with Parmesan Cheese and Parsley
Notes
Use whatever type of Italian Sausage you prefer, hot, medium, mild. I prefer to use Italian Sausage with Basil. It adds a nice mild flavor to the sauce.
