Pomegranate Salad is a sweet, tangy salad with a festive look and feel.
Pomegranate arils taste a lot like cranberries – fairly tart with a bit of sweetness underneath.
Teamed with pine nuts, red onion, feta cheese and topped with a maple syrup dressing makes a delightful, fresh salad.
Pomegranate season is relatively short and at it’s peak in late fall and early winter. In my area I can usually find fresh pomegranate arils into January and early February.
Ingredients
Salad:
Romaine lettuce, Chopped
Pomegranate Seeds
Pine Nuts, Toasted
Red onion, Chopped
Feta Cheese, Crumbled
Dressing
2 tbsp Maple Syrup
1 tbsp Cider Vinegar
1 tsp Dijon Mustard
1/4 cup Olive Oil
Salt and Pepper to taste
Making Pomegranate Salad
- Combine salad ingredients in a bowl.
- Combine dressing ingredients together in a small jar, shaking to combine and toss with salad
