Veggie Pinwheels are the perfect appetizer for any occasion. Full of fresh broccoli, peppers, and carrots with a delicious cream cheese spread these little pinwheels will be an absolute favorite at your next party!

Veggie Pinwheels Ingredients

Veggie Pinwheels List of ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup mayonaisse
  • 1 packet dry ranch dressing mix
  • 1 finely diced red bell pepper
  • 1 large or 2 small finely chopped carrots
  • 1 bunch broccoli, finely chopped
  • 1 head cauliflower, finely chopped
  • 8 large (10–12 inch) flour tortillas

How to Make Veggie Pinwheels

Combine the spread: In a medium bowl, use a hand mixer or spatula to combine the softened cream cheese with the ranch seasoning mix until smooth.

Assemble the wraps: Lay the tortillas flat on a clean surface. Spread the cream cheese mixture evenly over each tortilla, leaving a 1/2-inch border at the edges. Top with diced bell pepper, cauliflower, broccoli, carrots,

Roll tightly: Starting from one side, roll each tortilla tightly into a log. The cream cheese mixture will help seal the edge.

Chill: Wrap each roll tightly in plastic wrap and refrigerate for at least 1–2 hours. This helps the rolls firm up, making them easier to slice.

Slice and serve: Remove the plastic wrap, cut the ends off of each roll, and then slice the rolls into 1-inch thick pinwheels. Serve them chilled on a platter. 

Making Ahead

You can prepare the cream cheese base a day in advance, store in a covered bowl in the fridge. Similarly you can prep the vegies by washing, slicing and storing in a container in the fridge until ready to use.

Roll tightly, wrapping tightly in plastic wrap for at least 1 – 2 hours.

Change it up a Bit

  • Vary the spread: Instead of ranch, try a packet of Italian or taco seasoning in your cream cheese.
  • Add protein: For a more substantial wrap, add a layer of finely chopped hard-boiled eggs, crumbled cooked bacon, or sliced smoked turkey.
  • Mix up the veggies: Use your favorites! Other good options include shredded zucchini, corn, celery, green onions, and any optional cheese or olives or a pinch of everything bagel seasoning.
  • Spice it up: Add a little heat with a dash of cayenne pepper or red pepper flakes to the cream cheese mix.

Ingredients
  

  • 1/2 cup Mayonnaise
  • 8 oz Cream Cheese Softened
  • 1 package Dry Ranch Dressing Mix
  • 8 Soft Tortilla Shells
  • 1 bunch Broccoli
  • 1 head Cauliflower
  • 1 Carrots
  • 1 Peppers, Red or Green

Equipment

  • 1 Mixing Bowl
  • 1 Cutting board

Method
 

  1. Finely chopped vegetables
  2. Mix mayo, cream cheese and ranch dressing mix until a well combined smooth texture.
  3. Spread mixture evenly over each tortilla shell. Top with a variety of chopped vegetables. Tightly roll each shell and wrap individually with plastic wrap.
  4. Refrigerate until ready to serve. 
  5. When ready to serve, unwrap shell and slice into 1 inch pieces
