- 1 large or 2 small finely chopped carrots
- 1 bunch broccoli, finely chopped
- 1 head cauliflower, finely chopped
- 8 large (10–12 inch) flour tortillas
How to Make Veggie Pinwheels
Combine the spread: In a medium bowl, use a hand mixer or spatula to combine the softened cream cheese with the ranch seasoning mix until smooth.
Assemble the wraps: Lay the tortillas flat on a clean surface. Spread the cream cheese mixture evenly over each tortilla, leaving a 1/2-inch border at the edges. Top with diced bell pepper, cauliflower, broccoli, carrots,
Roll tightly: Starting from one side, roll each tortilla tightly into a log. The cream cheese mixture will help seal the edge.
Chill: Wrap each roll tightly in plastic wrap and refrigerate for at least 1–2 hours. This helps the rolls firm up, making them easier to slice.
Slice and serve: Remove the plastic wrap, cut the ends off of each roll, and then slice the rolls into 1-inch thick pinwheels. Serve them chilled on a platter.
Making Ahead
You can prepare the cream cheese base a day in advance, store in a covered bowl in the fridge. Similarly you can prep the vegies by washing, slicing and storing in a container in the fridge until ready to use.
Roll tightly, wrapping tightly in plastic wrap for at least 1 – 2 hours.
Change it up a Bit
- Vary the spread: Instead of ranch, try a packet of Italian or taco seasoning in your cream cheese.
- Add protein: For a more substantial wrap, add a layer of finely chopped hard-boiled eggs, crumbled cooked bacon, or sliced smoked turkey.
- Mix up the veggies: Use your favorites! Other good options include shredded zucchini, corn, celery, green onions, and any optional cheese or olives or a pinch of everything bagel seasoning.
- Spice it up: Add a little heat with a dash of cayenne pepper or red pepper flakes to the cream cheese mix.
